Brazil Honey Process Pedra Branca

In the ground coffee, I found honey-nut notes in the medium roasts that bring out enticing sweet-savory combo, shadowed by some mild cocoa bittering, and hint of fruit leather. The wet aroma had a roasted nut/savory note that I tend to associate with Brazilian coffee. But it also yields a fruited undertone that offered nice, rustic complexity. This honey process lot was thick-bodied in all roasts, and with more emphasis on fruits and rustic sweetness than the savory notes smelled up front. The cup profile has a note of natural dried peach, along with dried date pieces, and sticky malt syrup. Nutty hints popped up in both roasts, and with the fruity hints, brought out a flavor profile of date and nut bars. Full City+ roasts bring out brooding choclate flavors, the bittering side of high % cacao bar felt at the sides of your tongue, with fruity hints marking the aftertaste.

This coffee comes to us from the region of Pedralva, in the Mantiqueira micro region, an area that boasts over 2000 smaller farms. At 30+ hectares each, the farm sizes aren't "small" when comparing with the small holder farms we buy from in Colombia for example. But they're small for Brazil, home to massive estates with fully mechanized harvesting operations. Many of the farmers in Pedralva still do some manual harvesting, which means more control  over separation of ripe and underripe cherry. This particular lot is from Pedra Branca, a processing facility that was erected as part of a quality-focused initiative providing the local farmers state of the art processing infrastructure where they can process smaller batch sizes. The farms are located around the Pedra Branca mountains, plantings in the 1300 meter range and planted mainly in Red and Yellow Bourbon and Catuai. We found that the cup profile tastes the most settled with at least 48 hours.
