While the Democratic Republic of Congo has seen continuous conflict and political instability for the better part of three decades, coffee farming has been a sort of lifeline for many of the farming communities. The resurgence of small scale coffee farms in the Eastern Provinces near Lake Kivu have acted as a major agricultural tool to help with the rebuilding of community by aiding with much needed economic stability. Bourbon is the typical varietal grown in the Congo, that when grown in the high altitudes, yields a dense coffee bean capable of a sweet, complex, and high acid cup profile.
