This coffee is made up of a small lot of coffee from Don Villatoro, one part of the Villatoro family whose coffees we've bought and blended as Familia Villatoro, as well as offered on their own when there is enough. This lot from Rosalio is 15 bags, and we thought deserved being showcased outside of the larger family blend. The Villatoro family lives in the Peña Blanca part of La Libertad, and their farms are situated around 1700 meters above sea level. They have mostly Bourbon and Caturra planted on their farms, with a sprinkling of Typica trees scattered throughout. This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us. It's also part of our "Proyecto Xinabajul" small holder project in the region, which you can read more about HERE.

From medium to darker roasting, this coffee from Don Rosalio Villatoro pushes sugary sweetness and roasted nut tones in equal volume, constructing a balanced brewed coffee at City+, Full City and beyond. The fragrance and aroma give off smells of roasted almond wrapped in caramelizing dark sugars and the wet aromatics don't stray too far, albeit with a bit more intensity. The hot cup is laced with raw sugar flavors at both City+ and Full City, turbinado and sucanat in the lighter of the two, and a bit rustic like molasses at Full City. As the cup cools, nut tones come up like Brazil nut, raw almond, and a hazelnut/milk chocolate flavor in the aftertaste. Full City roasts show a subtle berry aroma in the finish, a pleasant top note that follows rustic sugar sweetness and cocoa bittering roast tone. This will do fine at Full City+ too, though I did not roast that dark myself.
