Flavors are familiar and simple, well-balanced and easy to drink. Malty-sweetness, burnt sugar, almond, milk chocolate and mild hint of acidity. It's the kind of coffee I find myself reaching for. City to Full City+. Good for espresso.

Product Overview
Full Cupping Notes

Balanced coffees are much harder to talk about than those with outlier flavors, but more often than not, they're the coffees we find ourselves reaching for. San Miguel Urias is one of those coffees. It's not overly anything. Rather, simplicity is its strength and it's very easy to drink! This is the main reason it was used as the control sample for the recent "Fermentation Project" global cupping hosted by Lucia Solis and James Hoffman. It provided the perfect reference point to return to in order to pick out subtle differences that were a bi-product of the multiple methods of wet processing used for the experiment. The coffee for this review was roasted to about City+, which roughly correlates to 13% moisture loss after roasting. The fragrance and aroma had a scent of minimally processed sugars, molasses and faint nutty hints. When brewed, the cup sweetness sits in a nice place with acidity, and subtle top notes offer soft contrast without taking over the cup. When hot, there's a malty aspect to the sweetness, like malt syrup with accents of Horlicks malted milk, and some burnt sugar in the aftertaste. A background bittersweet note brought to mind milk chocolate, and a mild acidic impression suggests apple and maybe a hint of tea.

Origin & Farm Notes

This coffee comes from Finca San Miguel Urias, whose farm and mill straddle the edge of Antigua town, not far from Ciudad Vieja. The farm is planted  primarily in Caturra variety, a natural dwarf mutation of Bourbon, along with smaller amounts of H1 and Bourbon. This lot was part of the Fermentation Project global tasting kit, a project put together by fermentation specialist Lucia Solis, and coffee coffee James Hoffmann to examine the impact of fermentation on what we experience in the cup. For the Project, the same coffee lot was harvested and processed in parallel, but utilizing different fermentation approaches in order to understand their influence on flavor. This coffee was the mechanically demucilaged ("machine washed") control, which in many ways served as the somewhat neutral reference point to the three types of fermentations performed with the other three. The process involves pulping the cherry and fruit mucilage in one fell swoop, then sending the coffee straight to the drying patio. The mechanical demucilage process uses very little water compared to traditional wet processing, so you often see this type of wet mill in areas with water scarcity, like Tanzania. Efficiency, and the ability to control how much fruit is left on the seed (if any), also make it a popular choice for mills that produce a lot of honeys, like Costa Rica.
