Full Cupping Notes

City/City+ roasts have pronounced sweetness in the ground coffee, with notes of butter toffee and honey, but it also has a delicate citrus note within. Potent sugar notes saturate the steam from the wet crust, honey and nougat, along with suggestions of dried apple, and pear. Roasted to City+, the brewed coffee offers balanced flavors of creamy caramel and bittering dark cocoa, with dried fruit accents of red apple and fig, along with a spice note of cinnamon stick. Tea-like aspects develop as it cools, and a note of Earl Grey black tea is brought out by tannic bittering in the middle and finish. Our brew had medium body and mildly present acidity, a nice middle ground that's complimentary to the cup.

Origin & Farm Notes

This coffee is from Tectitán farmer, Gonzalo Juan Chávez Escalante. He's from the village of Sacchumba, in Tectitán, Huehuetenango. His farm is called, La Sombra, named for the shady forest that is situated next to the farm. Gonzalo's farm is planted at 2100 meters above sea level, and like his neighbors, he is mainly cultivating Bourbon, Caturra, and Catimor. He is a "small holder" farmer in the truest sense, with just .5 hectares of coffee planted (around 2000 trees). Most farmers grow other cash crops too, with coffee supplying the majority of their income. His wet process method involves fermenting the coffee seeds pulped of their fruit for 48 hours, during which time the sticky fruit mucilage is broken down and can be easily washed from the seed. The coffee is then moved to a cement patio where it is dries in the sun.
