Sulawesi Wet Hulled Messawa Pak Yulias

This wet hulled Sulawesi lot shares a lot in common with coffee from Sumatra. The culmination of thick body and low acidity really draw your attention to the potent rustic notes and deep toned roast flavors found in the cup. Foresty smells are released from the grinds, rustic sweetness, pine sap, aromatic wood, and earthy raw cacao pods. The wet aroma is deeper toned, dark cocoa dominating the profile, with leafy green accents of tarragon and Italian parsley. The brewed coffee has strong wet hulled character, which is to say the underlying roast tones are accented by woodsy earth notes, like mossy peat, scorched wood, and leather. There's also a bit of loose leaf tobacco as it cools, and the finish has some dry nut aspects, though long and bittersweet. I recommend Full City or darker to draw out the brooding characteristics, which will also add a lot to an espresso blend. We often use 1:1 with Brazil for classic-toned chocolaty shot, or with dry process Ethiopia for those who enjoy fruited bittersweets.
