Full Cupping Notes
The dry grounds displayed fruited characteristics amidst intense cocoa bittering, with a caramelized sugar smell that had savory sweetness, like candied nut. The wet aroma had a pungent spice note, allusions to fruit pudding, dried prune, and a hint of aromatic cedar. Intense bittering tones take hold in the cup, fading to acetic fruit hints, and something like chocolate liqueur. Full City-Full City+ roasts give way to aromatics of woody incense, anise, and earthy dried fruits. Body is silky and promises the intense flavor profile leaves a lasting impression. We enjoyed our City+ roast quite a bit too, which is where process-related flavors come through most. The cup had fruited characteristics of freeze dried fruits, tamarind, and tangy dried dates. Very few dry process coffees get our recommendation for single origin espresso, but this is an exception. At Full City+, my ristretto shots were inky-textured and full of crema, with opaque bittering chocolate tones (think baking chocolate), and a dark plum note behind it. It's certainly intense, but I'd gladly go back for seconds!

This dry process coffee is from a quality-savvy coffee collector named Auliya who buys in the districts of Bebesen and Kute Panang, in Sumatra's Aceh province. Farms in these regions tend to span an altitude range of about 1300 to 1600 meters and are planted in older, long berry types (you'll see the long, canoe shaped beans) Abysinnia, Ateng and Tim Tim. In the scheme of things, Auliya's operation is quite small. He usually buys a few bags at a time, and then processes coffee with family at home. With small scale comes the capability for a high level of quality management, which he puts into all of the different process technics he employs (including full honey and dry process!). Last year we paid a little extra for the coffee in order to help fund a drying room so that he can dry coffee inside on raised drying beds. This year we were able to secure 20 bags of this unique dry process lot!
