You'll find classic balance and clean cup flavors from this Sulawesi coffee, brightly accented bittersweet tones that fit well within the flavor map of washed Latin American coffees. It's a versatile coffee that should garner wide appeal at a broad range of roast levels, as drip coffee and espresso too. The ground coffee had scent of honey glaze, pastry-like baklava with pistachio. The wet aroma offered nuanced caramel notes, creamy sweet smells, and burnt sugar. City+ roasts showed cleanly sweet notes of brown sugar and honey, with a hint of bread malt. There's a citrus acidic dimension in the light-to-middle roasts, sweet like lemon squares rather than sharp. There's also a haze of cocoa that fills out the aftertaste to a bittering climax in the long finish. Espresso shots at Full City+ are delicious, the velvety texture carries dark bittersweets, like chocolate taffy sweetness, high % cacao bar sprinkled roasted nibs, and a dark fruit note of dried date.

Origin & Farm Notes

This coffee is from farms in the small town of Tibussan within the Luwu District. The town sits in the Eastern slopes of Mount Latimojong, which boasts to highest peak in Sulawesi. The folks who run the mill purchase coffee in whole cherry form via small holders in and around the village. They do a variety of different process methods, including honey, and wet process, this being the latter. The coffee is pulped of its fruit before fermenting to break down the mucilage layer that is stuck to the seed. They then wash away the remaining fruit, and dry the coffee on raised beds over the course of roughly 2 weeks, give or take. Once dry, the coffee is stored in sealed bags for a resting period of about 30 days. Farms in this area span an altitude range of about 1250 to 1450 meters and are planted in Typica types and hybrids including Jember, S-795 and Lini-S.
