Full Cupping Notes
City+ is a good starting point, where bittersweet dimension is matched with simple sweetness, mild top notes. The fragrance and aroma showed pleasant sweetness of brown molasses bread, and a note of sweetened dark cocoa. The cup is on the simple side, and I mean that in a positive way. The profile strikes a nice balance between simple sweet notes, like brown sugar, and bitterting roast flavors. There's also slight hints of black tea that brings an acidic impression to the cup, along with an aromatic sage note. Full City roasts have chocolatey flavors that hint at semi-sweet chips, dark chocolate milk, and bittersweet truffles. Espresso shots at Full City are super creamy in texture, and I was surprised by the level of crema! I was also surprised by the tangy lemon note that accompanied rich bittersweets, a very nice match, like chocolate ganache with a lemon drizzle.

Origin & Farm Notes
This decaf is made up of coffee from Cooperativa Agraria Cafetalera La Prosperidad de Chirinos ("CAC") in San Ignacio, Peru. CAC was founded in 1968 as a way of organizing coffee farmers around shared goals of increased market access, and in turn maximizing reinvestment in their community. Through the years they've expanded on those core ideals, training members in organic coffee production, providing technical and financial assistance, and creating opportunity through eduction advancement and programs focused on gender equity. The coffee that went into this lot was fully washed/wet process, grown between 1600 and 2000 meters above sea level. For decaffeination, it was processed by Swiss Water Decaf in Vancouver, Canada. Their patented method uses only water to remove 99.9% of the caffeine, without ruining the flavor. Does it still taste like decaf? I suppose that depends on who you ask. It's far and away better than any decaf you'll find at the store, and I would bet that it flies under the radar for the unsuspecting drinker. We really enjoyed this lot at City+ and beyond, where chocolate roast tone and soft sweet accents made for a delicious brewed coffee.
