While the dry fragrance has identifiably decaf smells, the brew doesn't say "decaf" at all. Tea accented with dried lemon peel are dominant in the cup flavors, a "Snapple" like flavor that has me wanting to try this as iced coffee right away! My City roast is on the light end of our roasting recommendations, and the coffee shines. Can sugar sweetness / simple syrup, clean dried lemon peel, a persistent sweetness through the finish and aftertaste. It's not super complex but what it shows is very good. As it cools the roast tone sweetness has honey-like aspect, like honey graham cracker. A more delicate decaf but full of flavor nonetheless. We only roasted as dark as City+, where body and cocoa roast flavors were noticeably more substantial.

It's not often that we have both the decaf and regular version of a coffee, so the launch of this Water Process decaf presents a unique opportunity to try this coffee both ways. Both the decaf and regular version are a blend of small producer coffee from farms in Mexico's southern Chiapas region. The area is made up of mostly small scale coffee farmers, many with just a couple hectares of land. This coffee was sourced from the higher altitude zones that span a range of 1200 to 1900 meters above sea level. Most of the farms are planted in older Typica and Bourbon types, with Caturra, and Catuaí cultivars mixed in. Each farmer processes their own coffee at home using small depulping equipment (motorized or hand-crank), fermenting in cement tanks, and then typically drying the coffee on rooftop patios. This lot is NOP Organic certified. The Mountain Water Process is a patented indirect decaffeination method using water to remove 99.9% of the caffeine from a coffee. It changes the physical characteristics of the coffee quite a bit. You'll notice the dark coloring, which makes judging the roast level a little tricky. 1st Crack can also be subtle, so pay special attention to the coffee when entering the final roast stages.
