Full Cupping Notes
This Pacas lot from Anibal Erazo is versatile in the roaster, though we preferred the bittersweet, and caramelized flavors that show up around City+/Full City. Lingering dark chocolate flavors are the centerpiece, with syrupy body to match. I found espresso shots at Full City were spectacular too (the two I pulled were 18g in, 24g out in 25 seconds). Punchy chocolate flavors are the main feature, accented by a nutty hint of almond oil that impacts the aroma, and creamy mouthfeel that coats your tongue. Cupping a City+ roast, the grinds smelled of semi-sweet chocolate chips, almond, and a hint of dried fruit. The cup was pleasantly bittersweet, with notes of chocolate taffy, milk chocolate, and a hint of banana bread bread with walnuts in the finish.

Anibal Erazo's farm "El Tontolo" ("the Fool, in English!) is located in the village of El Cedral, within the Western Honduras Department of Santa Barbara, that shares a border with Guatemala. His farm is just 1.4 hectares in size, with 1 hectare planted in coffee. The farm sits at 1575 meters above sea level, and Anibal cultivates both red and yellow Pacas, along with a small amount of Pink Bourbon. Anibal worked this land with his father, eventually inheriting a portion of the farm back in 2010. He linked up with Beneficio San Vicente through a relative and has been focused on making improvements to his farm ever since. Anibal ferments his coffee for around 48 hours without water, after which, he rinses four times in clean water to remove the remaining fruit. The coffee then moves to indoor, "solar" drying rooms where it is turned for 2+ weeks until fully dried.
