Product Overview
Full Cupping Notes

The ground coffee has notable sweet smells at City roast level, offering notes of caramelized sugars, accented by hints of candied nuts and a lightly spiced sweetness that's a bit like coffee cake. The wet aroma showed more fruit than the grounds, raisins and dried peach, with pungent sweet smells of torched sugar desserts. The brewed coffee has a really nice confluence of dark sugars and dried fruits, like dark brown sugar, dried fig and date. The sweetness is syrupy and delicious in the light roasts, and lingers in the finish. Plump fruit accents in the top end draw out a pleasantly bright acidic impression that gets a bit grabby in the mouthfeel, accentuated by accents of orange tea, and dried apple with the tangy/bittering skin intact. The level of sweetness is excellent at Full City roast level too, with flavor profiles of chocolate confections, truffles, dark chocolate ganache, and a hint of dried berry as it cools.

Farm Notes

Origin & Farm Notes

Like many of his neighbors, Axel Palacios grew up in a coffee family. His great grandfather started planted coffee in Palmira, La Libertad, and packed everything in and out of the mountainous region by mule. Through the years, the land has been divided into separate plots, passed down from one generation to the next. Axel took on his part of the farm in the late 90's, planting in Bourbon, Catuaí and Caturra cultivars. The altitude of his land ranges from 1500 to 1900 meters above sea level. His coffee comes to us through a joint-effort of two local micro-mill owners who are perform farmer outreach on our behalf finding and delivering many, many samples to us of coffees from family members and neighbors alike all over the Huehuetenango region. Each year we make several visits to the area in order to visit as many of these farmers as possible and cup hundreds of samples with the hopes of expanding our "Proyecto Xinabajul" project that we started more than 15 years ago.
