Full Cupping Notes
The sweetness in the dry grounds has a whiff of dark sugars, with an accent of hazelnuts, and bittersweet cocoa powder. Sweetness and bittering roast notes permeate the wet aroma, smells well-balanced in middle roasts, with a hint of baked fruit. The sweetness is well-developed at City+, and I wouldn't hesitate to roast lighter too where I think you'll find some brighter cup flavors. Notes of raw sugars offset the undercurrent of bittersweet roast flavors at City+, and the cup profile shows hints of cinnamon spice, red apple, and D'Anjou pear. The cup acidity is quite nice at light roast levels, and brings a juicy bright element to the brew. Full City roasts have very nice roast intensity, chocolate flavors pushing their way to the front, like Dutch cocoa, and high % cacao bar, along with a subtle berry hint. Body is pronounced in all roasts which really adds to the coffee's overall substantial feel. Aurelio del Cerro is very versatile coffee in terms of roast level that brews up a sweet cup all along the roast range, and also makes a knockout espresso in the Full City/Full City+ end of the spectrum.

Origin & Farm Notes
This coffee is from Aurelio Villatoro, a key connection for us in our Huehuetenango coffee buying. Not only does Aurelio have his own farms (Regalito, Boqueroncito, Esperanza, etc...), but he and his family have erected a few wet mill sites in their local communities where they offer a good price for coffee cherry from other small farmers in the region. This lot is from his newest mill in La Libertad region, "Punta del Cerro", that is managed by he and his brother Aler. We like these coffees, and go through quite a lot of samples of daily process batches from these farms to select the ones that have the best qualities the farm has to offer. The Punta Del Cerro farm is right across the road from the mill, situated in a valley between two steep mountain sides, providing perfect topography for growing coffee, and ideal shade provision from the surrounding natural forest. In this area coffee tops out about 1750 meters due to the colder climate here.
