What stood out about Hamacas was how well balanced the profile was, no matter the roast. Maybe deep into second crack will burn things off, but City, City+, and our darkest Full City roast that was just shy of 2nd Crack showed impressive sweetness that anchored the cup. A buttery caramel note is released when grinding the coffee, with toffee almond, and a note of fruit and nut bar. The wet aroma continues this theme with smells of dulce de leche caramel, and fruits reduced with brown sugar, like pear crumble. Flavor profiles differ a bit, depending on where you land in terms of roast level. I found City+ to be a great starting point, where a base caramel sweetness is creamy and long lasting, shifting into notes of caramelized sugars, and flan dessert as it cools. A citric lemon peel accent brings some brightness to the profile, but fairly mild intensity. Full City roasts draw out the burnt sugar flavors, with wisps of smokey cocoa nibs, and cola note accents the finish. I had great results in our Clever Dripper immersion brewer, highlighting dense body, and milky texture.

Origin & Farm Notes

"Lote Hamacas" is part of a 25 hectare farm in La Libertad, Huehuetenango, called Finca Terrazas. The farm is owned by the Vides family, who have been producing coffee in this region for three generations. The Vides family also manage a farm, La Bolsa, which we've bought in previous years. Finca Terrazas sits at 1850 meters above sea level, and is planted in Caturra, Bourbon, and Pache. After the coffee is harvested, they allow the cherries to ferment for 36 hours before pulping the fruit. It's then fermented for 16 hours, and moved to dry on the cement patio for around 2 weeks. Lote Hamacas brews balanced sweetness and bittersweet tones at a wide range of roasts, and a milder level of acidity when roasted dark makes it an appealing option for espresso.
