Full Cupping Notes

The sweetness in the dry grounds has a whiff of dark sugars, accented by notes of dried raisin and banana chips, along with a sprinkling of bittersweet cocoa powder. Bittersweet roast notes permeate the wet aroma, well-balanced, with accents of baked fruits and cinnamon. In the brewed coffee, the sweetness ranges from unrefined sugars to creamy caramels, offset by roast-toned accents and a moderately bright, fruited dimension. The cup acidity is quite nice at light roast levels, and brings a juicy element to the flavor profile, like pear, and Pink Lady apple. The flavor profile shifts to pleasant bittersweetness that's lightly spiced in the aftertaste, like cinnamon-laced cocoa. Full City roasts have very nice roast intensity, chocolate flavors pushing their way to the front, rich dark chocolate, with an accent note of cooked berries. Body is pronounced in all roasts which really adds to the coffee's overall substantial feel. Aurelio del Cerro is a very versatile coffee that brews a sweet cup all along the roast range, and also makes a knockout espresso in the Full City/Full City+ end of the spectrum.

Origin & Farm Notes

Boqueroncito is a farm very close to another we buy from the Hoja Blanca area of Huehuetenango, Finca Regalito. This area, located in the Northern reaches of Huehue at the border with Chiapas, Mexico is called Cuilco. Both Regalito and Boqueroncito are under the care of the Villatoro family, with Aurelio Villatoro overseeing the wet mill, and Antonio, his nephew, specifically looking after these two farms. We like these coffees and go through several of the process batch samples from the farms to select the best qualities they have to offer. Boqueroncito starts at 1,400 meters above sea level and tops out at just under 1,550 meters. While that's not screaming high altitude for Guatemala, coffee is only planted up to about 1750 meters due to the colder climate here, which slows down the rate of cherry maturation, and aids seed density. The main image for this coffee shows Antonio and his uncle Aurelio, who manage the Boqueroncito farm.
