Guatemala Antigua Finca Cabrejo

Cabrejo shows high level of sweetness at a wide range of roasts, with bright accents and a spiced finish traded for more dominant bittersweets at darker levels. The dry fragrance and wet aroma showed complex notes of cane sugar and maple, subtle hints of vanilla, and cinnamon. These sweet scents offers a glimpse into the brewed coffee that proved to work their way into both our roasts. City/City+ roasts show impressive cup clarity. The base flavor has a sweetness of raw sugars and crisped caramel, with a vibrant lemon black tea note, vanilla bean, and some bittering baking spice in the finish. At Full City, a cinnamon-spiced chocolate flavor takes over, with intimations of oatmeal cookie, and hints of dried raisins. Cabrejo's acidity still comes through at Full City, but to a much lesser degree than when roasted light. My Full City roast doubled nicely as single origin espresso, viscous and with syrupy chocolate notes, and citrus rind brightness up front that fades to a hint of whole cloves in the finish.
