This tiny Anaerobic-Washed Gesha coffee is from the same family farm as our wet process "Acatenango Gesha" that we've been buying for the last 15+ years. We were curious what kind of profile a long fermentation would produce, and are happy they agreed to produce this 70 lb. experimental batch! It shares many of the same flavor markers as their wet process Gesha; bright, clean flavors, syrupy in texture, and perfumed with floral notes unique to the Gesha variety. The main difference was more pronounced fruit flavors and an amazing honey sweetness. City roasts smell incredible. The grinds are very floral and sweet, with clean notes of orange honey, tropical fruit, and graham cracker. Pouring hot water on the grinds lifted a perfumed scent of honeysuckle flowers in the steam, with red fruits and fragrant teas. The cup is phenomenal, honey-sweet from start to finish with incredibly clean fruits and a floral aroma overhead. We noted that it had a "liquid floral" aspect, evocative of potent floral essential oils, jasmine, honeysuckle, freesia, etc, and has a big impact on the flavor profile. Aromatic aspects carry over to the more fruit-forward flavors and come off like tropical fruits, purple passion fruit, granadilla, and more. It has well articulated acidity too, like Valencia juicing oranges that bring a nice structure to the complex cup flavors. Our roast was very light, and yours should be too! Weight loss was just 11%, which is the lighter end of a City roast. I recommend dropping your batch just before the end of 1st Crack, and for Behmor users, engage the cooling cycle about 1:00 after the start of 1st Crack.

We've been a buyer of this single estate Gesha for more than a decade, and their production has grown quite a bit during this time. This year, we asked if they could do a small process experiment for us with the agreement that we'd buy it no matter how it turned out. We're sure glad they agreed! It's a hybrid anaerobic-washed/wet process where the whole cherries were stored in plastic bags for 72 hours, after which they were wet processed as normal. The result was better than we expected. Fruits are more pronounced, but very clean and articulate, with sparkling acidity and floral notes that came off with the potency of essential oils. It has to be kept to a light roast, so City roast level max! We only have 70 lbs. and limiting orders to 1/2 lb. per customer. Hopefully they can produce a larger batch nexts year!


We've been the sole buyer of this coffee and have chosen to keep certain farm specifics to ourselves. The farm sits on the steep slopes of Volcan Acatenango between 1600 - 1700 meters and reaps the benefits of rich volcanic soil. This farm has been in the same family for a couple generations now and they've built out an impressive wet milling facility onsite as well.
