One thing we love about the coffee from Senna Katta Mountain is its versatility. It makes a delicious light roasted pour over, brightly accented and sweet, a little lower intensity in the fruit department than some of our other naturals. But that's what also makes it the kind of dry process we reach for to use as espresso or in a blend. Limu naturals can be quite different than those from Yirga Cheffe and Guji, the thick body and bittersweet potential makes them a great candidate for a complex shot of espresso. The dry fragrance has fruit pastry-like sweetness, accents of cinnamon roll and peach scone, with notes of brown sugar and bittersweet cocoa. The wet aroma brings out a really nice scent of cooked sugars, with more defined notes of dried strawberry, drinking cocoa, and a hint of sweet basil. The cup has very attractive sweetness, with subtle fruited profiles that open up to more discernible flavors as you sit with it. At City roast level, there's a nice bright aspect backing the cup, like ripe berry, along with subtle aromatic accents, like potpourri and spice. The cup sweetness has a molasses note that plays off notes of dried apricot and strawberry, with hints of earthy yellow tea and anise in the aftertaste. Dark roasts have impressive chocolate flavors and viscous, inky body. Fruits are lower key, but still offers background hints of complex dried fruits. It makes incredible single origin espresso, Full City/Full City+ roasts are deeply bittersweet and berry-toned, like the profile of a raspberry dark chocolate truffle.

Senna Katta Mountain farm is located in the Boter forest preserve, Limu Kossa, Jimma. It's actually the only coffee farm in this remote forest area, and the small clearing made for their processing site is pretty easy to spot on an areal map amidst the surrounding sea of green! This isn't a clear cut coffee farm, but rather, part of a government land grant where plots in agro forest areas were given away to farmers who could be good stewards to the land by maintaining the natural forest habitat. Senna Katta Mountain is owned by wife and husband Yodit, and Solomon. They are both pharmacists who met when opening a clinic in Limu Kossa sometime ago. Yodit's father was an agronomist in Jimma, working for the government, and it was their dream to build a farm in the area. With his help as their advisor, they did just that, stepping in as owners after the original owner was unable to keep up with the land improvements that were required. Senna Katta Mountain is 130 hectares in size, though only 110 hectares are under production. It's considered semi-forest coffee since it's not wild coffee, but still grows beneath the preserved forest canopy overhead. This is a very high elevation zone, the mill at 2300 meters with coffee growing even a little higher. Because of this, the coffee comes a bit later than most other areas we buy from.
