Ojo de Auga has lots of milk chocolate character, with balanced sweetness, and fruited highlights that give the cup a nice structured feel. Grinding the light roasts brought up semi-sweet chocolate, with mild impressions of walnut and dried fruit. The wet aroma had more of a caramel sweetness, with oatmeal cookie, and baked apple. At City+, the cup sweetness has a toasted sugar flavor, with hints of praline almond, dried coconut, and vanilla bean. Low tones are moderate in the light roast, and offer bittersweet suggestions in the finish. The level of acidity was impressive next to our other Nicaragua lots, with aspects of citrus, lime-ade, and green apple. Full City and Full City+ roasts draw out inky dark chocolate flavors, flourless torte, and more intense bittering, like baking cocoa, in the aftertaste. This is a great coffee for chocolate-forward espresso, or as a body/bittersweet ingredient in a blend.

Origin & Farm Notes

Ojo de Agua is a farm managed by the folks at Cafetalera Buenos Aires, one of Sweet Maria's main suppliers of Nicaraguan coffee for many years now. Each farm they have is a sight to behold. All of their farms are planted beneath a dense forest canopy. Walking the farm, it's apparent that the coffee plants are well-managed, and with clear segregation of the different cultivars they grow (Caturra, Java, and Maracaturra mostly), making the harvesting specific plants quite easy for farm workers. This lot is all Caturra, a mutation of Bourbon that occurred in Brazil in the mid 1930s, but was planted in South and Central America mostly in the 1950s. Ojo de Agua sits at roughly 1500 meters above sea level, a moderately high altitude for Nicaragua. The shade canopy really helps to slow the rate of cherry maturation too, increasing seed density, and ultimately, leading to a higher probability of sweetness and acidity in the cup.
