Product Overview
Full Cupping Notes

The ground coffee smells well-balanced, with moderate sweet notes of light brown sugar and toffee, accented by hints of dried apple and malted cocoa. The wet aroma has sweet accents of warm caramel and raw cane sugar, with a hint of vanilla bean. Clean sweetness underscores the cup at City/City+ roast level, with moderate, yet mouth refreshing acidity that is brought out by subtle hints of fruit. This is such a pleasant coffee to drink, with a syrupy side that gives off impressions of caramel and butterscotch sundae toppings. As the coffee cools, hints of dried apple and pear come into play, along with a mild cocoa note that brings soft low tones to the finish. Full City roasts develop bittersweet chocolates, somewhere between milk chocolate and milder dark, like 50% cacao (think Hershey's Special Dark). Body is silky on the palate, and the finish has pleasant bittering aspects of cocoa solids.

Origin & Farm Notes

This coffee comes from a producer named Ana Montero, whose family have long standing coffee roots in the Santa Rosa region of Tarrazu. Her coffee farm is called "La Obediencia, and is located in Santa Rosa Arriba, topping out around 1900 meters above sea level. At 56 hectares, her farm is sizable, planted with mostly Catuaí, a natural dwarf mutation of Bourbon that's common in Costa Rica. From farm management to processing the cherries, the business is kept within the family. Ana's cousin Kevin, takes care of processing the cherries at his neighboring mill, called Santa Rosa 1900. They use a mechanical demucilager to machine wash the coffee, leaving only a trace of fruit stuck to the seed. Though machine washed coffee bypasses fermentation, this is the equivalent of a "fully washed" coffee in Costa Rica. The cups offer balanced sweetness and acidity, with just a hint of fruit.
