The grinds had a malty-sweetness, with bittersweet chocolate, and savory roasted nuts. The sweetness was a bit more pronounced in the wet aroma, with aspects of toffee nut, and nougat, as well as a faint note of dried date. The brew offers a neutral Brazil profile, mild nut-toned sweetness, low acidity, and bittersweetness that's easily developed with dark roasting. It's a low intensity coffee, and offers hints of almond, sesame paste, and deep-toned cocoa powder. I pulled a couple espresso shots of my Full City roast, and enjoyed the bittersweet bite of dark chocolate and baking cocoa, and creamy body ensured a super long finish.

Origin & Farm Notes

The Alto da Serra farm has been passed through the Dutra family for three generations now. Currently, the farm is in the hands of Winícius Dutra, who grew up actively working the farm with his father from as far back as he can remember. The farm is located in Sao Sebastiao do Paraiso, and sits on the rolling hills at an altitude of 1060 meters above sea level. The farm is planted in Mundo Novo, a natural cross of Bourbon and Typica that occurred in Brazil, and is widely planted throughout the country. This a dry process lot, meaning the whole cherries are dried with the seed intact. In some cases dry processing results in fruity flavors. However, Brazils often take on more body, low acidity characteristics, which is what we taste in this coffee. It's a big part of what makes Brazilian dry process coffees a top choice for espresso blends.
