The Aillio Bullet R2 is an update to the Aillio Bullet R1 Classic. It takes all the great features of the R1 and adds a few extra bells and whistles. These include a little more power, Flowsense airflow management, a revised control panel, and other design updates that allow for easier maintenance and cleaning. The machine can easily roast at its top capacity of 2.2 lb (1 kg) per batch using induction heating and is a great option for home roasters and light duty commercial roasters who want more control and capacity.

    For years, experienced coffee roasters have been using the Aillio Bullet R1 for both advanced home roasting and to operate small roasting businesses. Amongst compact, electric roasters the Bullet R1 had the largest batch capacity at 1 kg (2.2 lb) and tremendous hourly output capacity thanks to its back-to-back roasting capability and quick roast time. Coupled with the ability to connect the roaster to a computer and utilize Aillio's RoasTime software to monitor roast progression and control the roaster as well as to log, save, and replay roasts; the Bullet R1 broke a lot of ground when it was released. The Aillio Bullet R2 is an update which offers a host of small functional and design improvements that set it apart from the R1.

     

    Key Changes

    • The R2 features 1700 watts of power versus the R1’s 1550 watts. Although it doesn’t translate into a larger batch capacity, the extra oomph under the hood allows for even more flexiblity in setting roast parameters.
    • With the extra power comes an extra power level. The R2 has 10 power levels versus 9 on the R1.
    • To achieve the increased power, the R2 has redesigned circuit and induction boards for increased performance and accuracy.  The power delivery system has a margin of error of +/-0.5%  versus the +/- 2.0% on the R1. We never felt that power accuracy and stability was an issue on the R1, so we're not sure how this improvement translates into roast experience.
    • A new airflow sensor (dubbed Flowsense by Aillio) dynamically adjusts the fan speed so that airflow at each fan setting remains consistent.
    • There are improvements to the front panel UI as well as an improved LED light which makes viewing coffee through the sightglass and in the trier much easier.
    • The door handle has been moved to the left side so that it doesn't interfere with the trier handle when opening the door.
    • The Bullet R2 includes a bean deflector for the drop chute to keep errant beans from missing the cooling tray, so there's no more need to 3D print or design your own.
    • New modular connections allow for easier access through the control panel for maintenance, such as to clean the IBTS sensor at the front of the roaster.
    • The data connector between the roaster and your computer has been updated to USB-C

     

    Core Features

    What sets all Bullets apart from the other roasters we offer are the batch size, roast quality, and roast control they offer. By connecting a computer to the roaster and using Aillio's RoasTime software, you have a high level of control over the roaster and access to excellent live logging from the traditional bean probe as well as the Infrared Bean Temperature Sensor (IBTS). Compared to manual logging, the Bullet makes it very easy to record your roasts and repeat a profile you enjoyed via the "playback" feature. 

    The Bullet utilizes induction to heat the drum, which in addition to being very power efficient is very responsive to any power adjustment. The induction module also makes it possible to roast up to 1 kg (2.2 lb) of coffee per batch, which we think is extremely respectible give the size and footprint of this machine.

    The Bullet R2 has 10 power stages, 12 fan speeds, and 9 drum speeds which allow for a huge level of control over your roast. You can make adjustments directly on the hybrid OLED/LED display or via your computer connect to RoasTime.

    Something important to consider about all Bullets is that they have no form of smoke suppression. Especially at the larger batch sizes, they will generate a large amount of smoke during roasting which is to be expected from any roaster with this capacity. Venting is very important to consider, and the user manual includes several examples of how to properly vent the roaster.

     

    Our Experience with the R2

    We've been doing most of our testing using our demo Bullet R2 Pro, but from a design and usability perspective the R2 and R2 Pro are largely the same, except for maximum batch capacity. Our main takeaway is this: the R2 does everything Aillio said it would, which is a lot! It's a testament to Aillio that they found ways to improve upon the original design. The Bullet R1 remains an extremely capable and competitive machine. Producing a machine that is an even better roaster is a tall ask, and they did it. In short, the core functionality of the Bullet R2 remains the same as the Bullet R1, but there are small improvements everywhere that add up. The new display on the roaster provides more information without needing to plug in your computer, which is a welcome improvement for people who prefer a more manual approach. Their new FlowControl sensor which measures and adjusts airflow as the chaff basket fills up is a great innovation, but we didn't really feel like that was an issue with the Bullet R1; we always kept our roaster extremely clean. For those that were/are not as diligent, this will be a welcome addition.

    Aillio has been quick to provide firmware updates to the machine and software updates to RoasTime as more of the R2 units have made it into the hands of coffee roasters. Over the years we have felt that Aillio does a decent job of addressing issues and making small improvements to the firmware and software of their roasters, and we expect they will continue to be diligent about providing fixes as they have for many years. What that means for anybody considering this machine is that you should be comfortable updating firmware and keeping apprised of updates. Thankfully the process is pretty straightforward on the Bullet R2 and covered in the operation manual.

    Roasting on the R2 has been easy and straightforward given our extensive experience with the Bullet R1. We've roasted a variety of coffees to different roast levels with great success. The R2 is very flexible in that way. The reponsiveness of the proven induction heating system has meant that the R2 was equally capable roasting delicate, washed Ethiopias to City and hearty, chocolatey Guatemalas to Full City+. We really had no problem doing it all and have been very happy with the roaster thus far.
