City roasts won me over, layered sweetness interspersed with hints of spice, and bright citrus. Brown sugar, Dulce de Leche, maple, buckwheat, five spice, lemon juice, and aromatic lemongrass tea. City to Full City.

Full Cupping Notes

The dry fragrance has a sturdy smelling sweetness when roasted to light and medium roast levels. It may seem a bit basic at this stage of the cupping (the ground coffee), but is clean and certainly very sweet. The wet aroma is markedly more intense, with a lot more to take in. The steam billowed with complex accents of dulce de leche caramels, baking spice and tea notes, and a sweet-savory interplay of malted grains and raw sugars. So nice! The sweetness in the brewed coffee is like brown sugar at first and shifts to a honey-wheat flavor of graham cracker. I found the profile opened up to notes of maple syrup, buckwheat, with a hint of five spice in aroma. Full City roasts bring out more of the bittersweet side of this coffee and develops flavor aspects of spiced Mexican cocoa. City roasts are what won me over though, with pleasantly bright acidic impression that rides the line between lemon juice and aromatic lemongrass tea.

Not far from the shores of Lake Kivu lies Karambi, a washing station named after Karambi town where it resides. The altitude at Karambi station is 1700 meters above sea level and the coffee is grown upwards of 2000 meters in the surrounding mountainside. The station was erected to buy coffee from smallholder farmers in the region, many whom also work at the site processing and preparing the coffee for export. Quality grading starts immediately upon delivery, the underripe coffee separated out by floating in tanks of water. They produce wet-process ("fully washed"), honey process and dry process ("naturals") coffee at Karambi and all three undergo intensive sorting technics in order to make sure the A1 grade coffee is made up of the densest seeds. This is a wet process lot and we still have the natural in the wings for early Summe so stay tuned.
