Product Overview
Full Cupping Notes

We found medium roasts of this yellow honey lot offer balance in the bittersweet tones, with buoyant body and a nice hint of acidity that gives the cup a structured feel. At City+ roast level the grinds have a sweetness of sorghum syrup, earth-toned and moderately complex, with accents of honey wheat bread note and maple bar. The wet aroma has some pungent burnt sugar notes, a smoky sweetness of brulee crust, molasses bread and rustic cocoa. The brewed coffee has flavors of blackstrap molasses, dark cocoa, along with baked goods like bran muffin. There's a mild citrus hint that pulls out some acidity in the cup, fading to a more grabby citrus peel notes in the aftertaste, along with dark, bittering cocoa powder. I picked up on some earth-toned hints in the aroma as well, like fragrant woods and corn silk tea. Darker roasts flatten out the acidic dimension considerably, shifting the focus to deep-toned roast flavors that will please those looking for a chocolate-forward cup.

Origin & Farm Notes

Kapchorwa was one of the highest elevation stations we visited on our 2025 visit, and sits right around 1950 meters above sea level. Most of the coffee they buy is from high elevation zones by proximity, and the quality of cherry selection and parchment caught our eye. They currently have around 1000 farmers registered with the station, allowing them to track granular details about things like quality delivered, farmer payments, and outreach. Farmers in the region grow a mix of varieties, with SL-28 being quite common, along with SL-14, Costa Rica 95 and Catuaí (many are supplied by the owners of the washing station). This is a honey process coffee, meaning they forego traditional fermentation, leaving a thin layer of fruit mucilage intact with the seed during the drying stage. Honeys often express deeper body and muted acidity, although the latter isn't true here. We found the light-medium roasts had a well articulated acidity, though toned down a bit when roasted to darker levels (Full City or darker).
