Product Overview
Full Cupping Notes

Here's our first wet hulled coffee from Pak Aulia of the year, with rustic sweetness, and incredible depth of flavor. The dry fragrance produced a sweetness of dark caramel, accented by subtle earth tones, and hints of malted barley and melon. The malt aspect carried over to the wet aroma and included a hint of malted beverages, like "Malta" soda if you've tried it. The steam had a savory, brothy scent, along with rice syrup layered in. It makes a rustic-sweet cup at City+ roast level, with earth-toned, herbal aromatics just beneath the surface, and moderate level of acidity for wet hulled coffee. Flavors of brown rice syrup and caramel provided a sweet backdrop, as herbal suggestions crept up in the cup. There were also hints of bran muffin, pear and toasted barley as the coffee cooled down some. Bittersweet roast tones underpinned the cup profile, especially in the darker roasts, and were accented by a foresty finish of scorched cedar. Full City roasts have indelible dark chocolate flavors that give way to hints of fresh green herbs, super inky body, and long bittering finish of cocoa and a note of black pepper. The dark roasts ring a lot of bells for espresso use, either as single origin, or a blend component.

Origin & Farm Notes

This wet-hulled Aceh coffee is from a quality-savvy coffee collector named Aulia who buys in the districts of Bebesen and Kute Panang. This lot is from Gegarang, and other parts of Gayo, where farms span an altitude range of about 1300 to 1700 meters and are planted in older, long berry types (you'll see the long, canoe shaped beans), mainly Gayo 1 & 2, and Ateng. The coffee is processed by the farmers down to wet parchment ("gabah"), and then wet milled at Aulia's small home operation with family. With small scale comes the capability for a high level of quality management, which he puts into all of the different process techniques he employs (including full honey and dry process!). The coffee is then moved to a dry mill in Tekengon, where it undergoes intensive hand sorting. That extra care and attention given to quality control is apparent when you look at the green coffee, and of course in flavor too, though not without defects (learn more about the Giling Basah / Wet Hulled process).
