Full Cupping Notes

The grinds have such a potent fragrance, intense molasses and dried fruit notes being the first things I picked up on, with floral accents and a hint of candied nuts as well. When you brew this coffee, pouring the hot water on the grinds draws out an accurate impression of this coffee's character in the steam. It has a distinct scent of pungent burnt sugars mixed with overt smells of berry/fruit reductions, cocoa, and a note of dried flowers that lends perfumed complexity. This juxtaposition of heavier fruits and delicate floral accents is really quite complex, and what makes Los Alpes a unique option in the company of other dry process and Gesha coffees. At City roast level, sticky fruit flavors are a focal point, as is a jasmine-laden aroma. The cup is unmistakably dry process, with powerful flavors of berry jam, dried cranberry, plum, and hints of ripe fruit in the aroma. It has a slight tangy quality that brings out some acidity, like coffee cascara tea, with a hint of orange rind. Floral notes of jasmine and honeysuckle are enticing, and that retronasal aspect combines with some of the rustic fruited undertones to bring about a hint of passionfruit jam. This coffee has a very round body, and starts to show some cocoa bittering as it cools too. Makes an excellent pour-over or iced coffee!

This dry process Gesha from Los Alpes farm is a marriage of heavier fruit flavors from process method, and fragrant floral aromatics that tend to be part and parcel with Gesha coffee. It's a very complex cup profile, and comes as no surprise to see them win 1st Place at this year's Cup of Excellence competition with a specially prepared lot of this coffee. We've been buying coffees from their other farms for close to 5 years, including Acopio Suyatal, La Laguna, and of course Buenos Aires. These are all managed by the Valladarez family who, between father Luis Emilio, and son Olman, have been growing coffee in the region for over 50 years. The coffee is grown around 1500 meters, and processed at the Buenos Aires beneficio down the mountain, closer to the town of Ocotal. They Gesha cherries are dried on raised beds in "tunels", long outdoor drying "rooms" that protect the coffee from rain and sun, while allowing airflow to help facilitate nice, even drying. It's worth noting that being dry process coffee it will produce a lot more chaff that most wet processed lots. This means making sure to vacuum your roaster between batches, especially for the Behmor with its open heating coils at the back of the roast chamber.
