The grinds had a nicely balanced sweetness of simple syrup type sugars, with a ground almond note, and slight green herbal hint. The wet aroma had caramelized sugar notes, with nutty accents of almond and praline coated nuts, as well as subtle cooked fruit dimension. The flavors in the brewed coffee are well-balanced in the middle roasts with sweet-nutty accents, and subtle acidic impression that are sure to garner wide appeal. Cane sugar / turbinado sweetness comes through first, with nutty tones toward the finish. Tea aspects marked the sweetness, a bit of cinnamon tea, and hint of green tea in the finish, along with pistachio. Dried lemon peel characteristics lend to a mildly present acidity.

Origin & Farm Notes

While most of our Mexican coffee is from Oaxaca, this lot comes from the state of Veracruz, in the Eastern Cordillera region of Huatusco. This area is surrounded by high mountains and cold temperatures, not to mention climatic zones that see a lot more wet weather than some of the Southern coffee lands. Wet, cold weather makes drying coffee difficult, which leads farmers to sell cherry rather than try and dry the coffee themselves. The coffee is centrally processed at a mill where it will undergo 15-20 hour fermentation to break down the fruit mucilage, and then controlled mechanical drying. This lot comes from from several farms in Huatusco, ranging from 1 to 18 hectares in size. The altitude spans a range of 1500 to 1900 meters above sea level, and most farmers plant some mix of disease-resistant varieties, and older Bourbon and Typica types.
