Full Cupping Notes

This has been a very nice decaf to drink, with simple, crowd-pleasing flavors, bittersweet and malty, and capable of some brightness if roasted light. The dry fragrance had notes of light brown sugar, bran muffin, and mild chocolate. The wet aroma showed aspects of baked goods, pecan sticky bun, caramel blondie bar, with a hint of raisin. It brews a very clean decaf cup, and I think City+/Full City is where it becomes pretty difficult to peg as being decaf at all. The sweetness has malt syrup, light molasses bread, a hint of brown sugar and cinnamon. I noted "matcha tea" when cupping, which brought earthy brightness, and a structured feel to the cup. Full City roasts are more chocolate-toned, with accents of malted beer grains, and chocolate almond. This Chiapas decaf is delicious brewed, but body is a little too thin for espresso, in my opinion.

Origin & Farm Notes

This organic water process decaf is a blend of small producer coffee from farms in Mexico's southern Chiapas region. The area is made up of mostly small scale coffee farmers, many with just a couple hectares of land. This coffee was sourced from areas that span 1200 to 1800 meters above sea level. Most of the farms are planted in older Typica and Bourbon types, with Caturra, and Catuaí cultivars mixed in. Each farmer processes their own coffee at home using small depulping equipment (motorized or hand-crank), fermenting in cement tanks, and then typically drying the coffee on rooftop patios. This lot is NOP Organic certified. The Mountain Water Process is a patented indirect decaffeination method using water to remove 99.9% of the caffeine from a coffee. It changes the physical characteristics of the coffee quite a bit. You'll notice the dark coloring, which makes judging the roast level a little tricky. 1st Crack can also be subtle, so pay special attention to the coffee when entering the final roast stages.
