Product Overview
Full Cupping Notes

Rosalio Villatoro's coffee offers balanced bittersweetness at a wide range of roast levels, with crowd-pleasing flavors of chocolate and nut. The fragrance and aroma show a bit of toffee and caramel in the sweetness, with tree nuts, and slight bittering scent of dark cocoa and burnt sugar. In the City+ to Full City range, the brewed coffee tastes like it's saturated with cocoa notes, like semi-sweet chocolate chips, lightly sweetened cocoa powder, chocolate biscotti, and more. The sweetness comes up a bit as it cools, dark toffee and caramelized sugars, with accents of almond, pistachio, and some walnut bittering in the aftertaste. I pick up on some slight herbal notes in the City+ roasts, along with a subtle lime-like acidity, that all but disappear at Full City or darker. Dark roasts will pair very well with cream if that's your preference, and will certainly double as a chocolatey shot of espresso.

Origin & Farm Notes

This coffee is from Rosalio Villatoro, one part of the Villatoro family whose coffees we've bought and blended as "Familia Villatoro" in the past, as well as offered on its own when there is enough. We thought this particular lot deserved being showcased outside of a blend, and is thankfully a sizable bag count! The Villatoro family lives in the Peña Blanca part of La Libertad, and their farms are situated around 1700 meters above sea level. They have mostly Bourbon and Caturra planted on their farms, with a sprinkling of Typica trees scattered throughout. This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a sophisticated dry mill where they handle the finishing touches for exportation of the green beans. It's also part of our "Proyecto Xinabajul" small holder project in the region, which you can read more about HERE.
