Full Cupping Notes
This Pacamara lot from Keneth Merida shows impressive bittersweetness at a range of roast levels, and it's at the lighter end of the spectrum where subtle top note accents have the most clarity. The fragrance from the ground coffee has compelling sweetness of demerara type raw sugars, clean and slightly perfumed, with dark fruits in the background. The wet aroma brings a raisin note to the steam, with torched sugar bittersweetness, along with hints of purple fruits. At City/City+ levels, the cup yields very nice chocolate tones and accents of dark fruits, with a moderate level of acidity that has juicy characteristics. Base flavors of dark sugars, and high % cacao bar give way to hints of flame grape, black plum, and a fig note in the aftertaste. The coffee has a very nice roast bittering, even when roasted light, and comes off like extra dark chocolate, with some unsweetened baking cocoa in the long aftertaste. Full City roasts really showcase the bittersweet side, but still have a plump dark fruit accent, like chocolate drizzled blackberry.

Keneth Merida's farm, Finca Don Jorge, is a dedication to his father of the same name, and all that he'd learned from working his family farm, Finca Florencia. Don Keneth eventually stepped out on his own, purchasing a small piece of land in a village called Las Espinas, which is part of the Malactancito Municipality. This is the first coffee we've bought from Las Espinas specifically, however it's only about 10 miles North of La Libertad, which is where a good portion of our Huehuetenango coffees come from. Finca Don Jorge is planted in Bourbon, Caturra, Pache, and Pacamara, and everything but the Pacamara is harvested and processed together. Pacamara is a large bean cultivar, and a cross between Pacas and Maragogype. It's know for it's physical size and unique flavor properties. Keneth obtained the Pacamara seeds from his father, and this 12 bag lot separation accounts for roughly 1/3 of his total harvest. Finca Don Jorge is just under 3 hectares in size and sits at 1980 meters above sea level.
