My lightest City roast presented a delicate citrus tea note in fragrance, outlined by simple syrup sweetness, and a hint of malted grains. The wet aroma has a toasted sugar pungency to the smell, a sweetness that is enmeshed with softer roast-tone bittering, and fragrant accents. The cup is very sweet in the City to Full City roast range, the most developed end of this spectrum being weighed down with cocoa bittersweets. Light roasts start off sweet and balanced, and finish that way too. But as the coffee cools, the top end of the cup livens up some. To be honest, it's a subtle, quiet complexity. But accent notes like black tea, red apple, and lemon balm hints are found amidst the balanced core coffee flavors. It's an overall sweet, clean cup, with a dynamic acidic impression most pointed in light roasts.

Origin & Farm Notes

This Java cultivar separation is a blend from a few different coffee estates in Antigua. These farms are managed by the Zelaya family, whose coffees we've been buying for more than 15 years now. Farms like Cabrejo, Pavon, and Pulcal, these are old coffee estates overlooking the colonial city of Antigua. Along with Bourbon, Caturra, and Typica, each of these coffee estates has small plots of Java variety planted as well. The production numbers from each is quite small, so blending them together into one sizable lot makes a lot of sense. This year's blend is still just 1500 pounds. This region is said to have a unique micro-climate in the Antigua valley, as well as hillside exposure and well-draining soils.  This is a separation of the Java cultivar, known for it's elongated, narrow shape (a little like Gesha that way) and often presenting tea-like and spiced top notes as well as moderate acidity.
