Full Cupping Notes

This Uraga coffee has made a great addition to our dry process lineup, and one of the more versatile lots we have at the moment. Our light roasts were crowned by fresh fruits and aromatic spices, while our medium roast was driven by chocolate intensity, still quite spiced, and showed so much promise for future espresso use! The fragrance had an array of dried fruits coming from the ground coffee, with chocolate and vanilla milk powders, caramel, and cream soda in sweetness. The wet aroma drew out a brown sugar base note, accented by cinnamon sticks and a touch of clove powder. City roasts had notes of cranberry, and orange, with notes of rustic sweeteners like molasses and date sugar. I found the acidic impression to be convincing at this roast level, with bright accents of citrus and berry. The cup aroma had some Chai spice notes, anise and a hint of clove. With a little more roast development, darker roast tones backed the fruit flavors, with emerging notes of cocoa nibs, and high % dark cacao chocolate bar. There was a juicy dark orange note, with a pungent hint of chicory tea that brought out some really nice rustic complexity in the finish.

Origin & Farm Notes

This coffee is from farmers in the Uraga Woreda, one of the highest elevation zones we buy from in Ethiopia. This area is home to thousands of small scale farmers, most with less than half a hectare of coffee. They practice traditional intercropping with their coffee, mixing in other cash crops, like fruits, vegetables, and grains. Much of the area is semi-forest, which a primary canopy that provides ample shade for coffee. The altitude in Uraga stretches above 2300 meters above sea level, and farmers typically grow JARC landrace selections (Jimma Agricultural Research), identified by classification numbers like 74110, 74158, and 74112 commonly distributed through seedling programs. The coffee cherries are first put in water tanks before processing in order to separate any "floaters" - generally unripe coffee - from the rest. They then move the coffee to raised drying beds where it is sorted for defects by hand for the 2-3 weeks it takes to dry. We found this particular lot of Uraga to have dense fruit and bittersweetness, and enjoyed it on it's own and as espresso.
