Full Cupping Notes

The Ethiosar variety is a natural cross of Sarchimor and Rume Sudan, from Ethiopia. It has unique cup characteristics for El Salvador coffee, but don't expect high toned flavors and floral aromatics of an Ethiopia. Instead, balanced sweetness is the payoff, creamy, and long-lasting, with top notes providing more backdrop accents that add dimension to those base flavors. At City roast level, the coffee smelled like date sugar, pungent molasses, graham cracker, with a hint of apple tea. The cup sweetness comes off clean and fairly refined, and shows notes of creamy raw honey up front that cools to caramelized accents of burnt sugar, and toffee. Light roasts have a pleasantly moderate level of acidity, brought out by hints of raisin, rindy citrus, and black tea.

Origin & Farm Notes

This El Salvador coffee comes to us from San Miguel farm, in Santa Ana region near the volcano. The farm sits right on the border with Ahuachapán and Son Sonate, an area referred to as "Tres Limites", in the Apaneca Illamatepec mountain range. If you're familiar with the coffees we buy from Finca Miravalles, you'll likely recognize the family behind the farm, the Duarte's. San Miguel is Luis Duarte's original family farm, that through the years was all but abandoned. In 2024, he and his son, Luis Jr, began the long process of renovation, stumping many of the old trees, and replanting large areas of the farm in Bourbon (red and orange), Maracaturra, Gesha, and small amounts of Rume Sudan, Kenia, and a unique variety called "Ethiosar". The Ethiosar variety was discovered in Nicaragua, a natural cross of the disease resistant Sarchimor hybrid common in Central America, and Ethiopian Rume Sudan. It's a high yield, dwarf variety, known for disease resistance and a good cup. This particular lot showed pronounced sweetness, with bright accents and tea-like hints when roasted light. Altitude and San Miguel spans a range of 1480 to 1620 meters above sea level.
