Building nice core bittersweet flavors in Suyatal is simple if you roast to City+ or darker. Lighter roasts show subtle top notes that goes missing the closer you get to Full City, but the straight-ahead, bittersweet flavors that populate the darker roasts are something to celebrate. The fragrance and aroma present modest sweetness of caramel, bittersweet cocoa, vanilla bean, and nut. Our City+ roast had a simple brown sugar sweetness with caramelized accents, vanilla wafer cookie, and nutty accents of walnut and pistachio. Expect layers of bittersweet cocoa when taken towards 2nd crack, roast tones hinting at flourless torte type, and cacao "bean-to-bar" dark chocolate, with thick, creamy body. Suyatal is always a standout single origin espresso single origin espresso, ristretto shots showing deep chocolate flavors from front to finish, a creamy bittersweetness that's perfect for milk drinks too.
Finca Acopio Suyatal comes to us from Dipilto, a region within the larger Nueva Segovia Department. Nueva Segovia sits along the northern border of Nicaragua, very close to Honduras, and offers some of the most ideal climatic regions for coffee production in Nicaragua. At 1500 meters, Acopio Suyatal is one of the highest altitude farms of the small suite of estates run by Cafetalera Buenos Aires. The farm is roughly 10 manzanas in size and planted in mostly Caturra with some Maragogype shrubs peppered throughout. This Caturra separation from the farm represents coffee selected from the main part of the 2021 harvest. The coffee is fully washed at the Buenos Aires wet mill, fermented overnight to remove any remaining fruit, then trucked down to Ocotal where it is dry milled using state of the art equipment at Buenos Aires' dry milling facility. Wet process coffees from Buenos Aires always are uniform in color and bean size, making them particularly easy to handle in the roaster in terms of roasting evenly, and the ability to judge roast color.
