Kalita MINO Ceramic Dripper 185

The ceramic Kalita MINO is the latest addition to the Kalita line of flat-bottom drippers and continues the Kalita tradition of being easy to use, easy to clean, and good looking. The ceramic body has a nice heft and comes in an attractive blue-gray color. The dripper has three small holes in the base which allow for good drainage while being restrictive enough to give you good extraction.

We offer a variety of Kalita drippers, so why add another to the mix? Quite simply, there's something that feels great about using a ceramic dripper. The Kalita MINO ceramic dripper offers similar brewing dynamics to the Kalita Wave glass dripper while offering a bit more heft and durability. Like the other Kalita drippers we offer, the MINO features a flat bottom with three holes and utilizes Kalita Wave 185 filters

As mentioned above, the ceramic MINO brews very similarly to the glass Wave. The holes in the bottom of both the ceramic and glass Kalitas are a bit larger and less restrictive compared to the stainless steel model where the holes are narrower. This allows water to flow a bit more freely through the dripper which can be a pro or con depending on your needs. The flat bottom allows for the bed of ground coffee to form into a wider shape in comparison to a cone brewer like a V60 or Chemex, which we have found makes even extraction a little easier and produces a bigger bodied cup. So what does this all mean? Is a flatter bed of coffee better? Not necessarily...but we think it's a littler easier to evenly pour hot water through a wider, flat surface that drains at a moderate pace. 

One thing to be aware of is that the heat retention on this model is greater than both the glass and stainless steel equivalents, so pre-heating is highly recommended. Once it's hot we find it holds heat well, thanks to its beefy, fully ceramic construction. Cleaning is also a breeze since there are no detachable pieces or nooks and crannies to worry about. All in all we're happy to have this brewer available for all the people who looked at the other versions and thought, "I wish it came in ceramic."

Cleaning:

  • Top rack dishwasher safe.
  • Standard sponge, soap and water (or even a quick rinse) is fine in most instances.
  • Avoid harsh or overly abrasive cleaners of scrubbers which may scratch the glaze.

Brewing:

There are tons of Kalita Wave recipes and and guides out there. Just search "Kalita Wave Brewing" on YouTube and you'll be completely overwhelmed with competing opinions. Tom has a basic and non-precious general approach to pour-overs available here.

Brew Basics:

  • A common brew ratio is 16:1 (60g coffee per 1000ml) and we think this is a good starting place.
  • Insert the filter into the brewer and give it a good rinse with water from your kettle. Discard the rinse water.
  • Bloom the coffee with a slow first pour. Use a roughly 2:1 water to coffee ratio for this step.
  • When pouring the water, start in the center and spiral out towards the edge in a clockwise (or counter-clockwise!) motion. Once you get to the edge, work back towards the middle. Make sure to get in those ridges!
  • A slow, steady pour rate is ideal. Something around 10g/sec is pretty standard with some recommending slow and some faster.
