Origin & Farm Notes
The municipality of Unión Cantinil lies to the East of La Libertad, in the mountainous region of Huehuetenango. The hilly peaks of the Sierra De Los Cuchumatanes offer high altitude zones for farming coffee, up to 1600 meters above sea level in this particular area. This is a blended lot made up of several different small lots of coffee. The farmers on average are around 1 hectare in size, and most are growing some combination of Caturra, Catuaí, Bourbon and Pache coffee cultivars. Each farmer is responsible for processing their own coffee, which is generally processed using small depulpers to remove the outer cherry and fruit, then fermented in tanks with water to remove the mucilage, and dried on cement patios over the course of 1 to 2 weeks.
