This wet hulled coffee from Auilia Kahfi brews up pungent sweetness and brooding dark bittering flavors, and earth toned accents of brown spice and green herbs. Grinding the coffee released dark sweetness with nice herbal accents, malt syrup, and a mild fruited dark chocolate note. The cup has a nice mix of bittering bass notes and spice, notes of torched sugars and baking cocoa laced with mulling spice, woody cinnamon stick and clove, tobacco, and a hint of toasted barley in the aftertaste. This is a fantastic dark roast option too, my darkest roast batch hitting just a few 2nd snaps after dropping in the cooling tray (Full City+). The cup had thick, satiny body that coats the palate with a wash of bittersweet cocoa, extra dark 90% cacao bar, and a chocolate spice-toned finish. This makes an incredibe chocolate-toned espresso too! My 1:2 ratio shot was inky and thick, with drawn out cocoa flavors, rich chocolate bonbon, brulee crust, and lingering finish of cacao nibs and scorched wood. I'm loving it as a contemplative solo shot, but the profile will definitely pair well with steamed milk too.

Origin & Farm Notes

Aulia Kahfi is one of many Aceh farmers affected by the recent typhoons. They are isolated in a rural area that can only be reached by air (at the moment), and there are currently aid efforts underway to get them critical supplies, like food, water, and fuel. You can read more about this effort here, as well as donate to help bring aid to Sumatran coffee communities.

This wet-hulled Aceh coffee is from a quality-savvy coffee collector named Aulia who buys in the districts of Bebesen and Kute Panang. This lot is from Gegarang, in Gayo, where farms span an altitude range of about 1300 to 1700 meters and are planted in older, long berry types (you'll see the long, canoe shaped beans), mainly Gayo 1 & 2, and Ateng. The coffee is processed by the farmers down to wet parchment ("gabah"), and then wet milled at Aulia's small home operation with family. With small scale comes the capability for a high level of quality management, which he puts into all of the different process technics he employs (including full honey and dry process!). The coffee is then moved to a dry mill in Tekengon, where it undergoes intensive hand sorting. That extra care and attention given to quality control is apparent when you look at the green coffee, and of course in flavor too, though not without defects (learn more about the Giling Basah / Wet Hulled process).
