Full Cupping Notes

We were very happy with the clean cup flavors and complex sweetness of this washed Javanese lot, a nice counter point to the more rustic-toned wet hulled that we also bought from this supplier. The grinds had very nice bittersweetness, with dark sugars, and a hint of dried orange. There's complex caramelized sugar notes in the wet aroma, intensely sweet with that slightly pungent overlay of smoke. The sweetness in the cup has a nice level of intensity and finishes clean, and succinct. Caramelized sugar notes come through, along with a buttery caramel accent in the nose. There's a subtle aromatic note that has a bit of hop water with a lemon-lime twist. Full City roasts bring out a much more low-toned coffee, bittersweet, with a grain note that brought to mind dark chocolate bar with crisped rice.

Origin & Farm Notes

This lot is from a collector in the Garut District, near Gunung Papandayan where altitudes range from 1600 to 1800 meters above sea level. "Collectors" are intermediaries of sorts who buys partially processed coffee and whole cherry from small scale farmers and then process it down to the dried seed/bean. In the case of this lot, the collector has a small milling site where he processes his coffee down to wet parchment, and then sends it to another mill nearby who has ample patio space to dry coffee. Whereas many collectors create large blends of all the coffee they buy, this supplier pays special attention to separating the lots that he buys by region, these smaller lot sizes adding a layer of quality control, not to mention more specific provenance, like Papandayan. "Panénjoan" means "beautiful vista" in Bahasa, and is also the ancient name for Mount Papandayan. It's also the name of several other areas in Java for this very reason! (similar to a thousand "Buena Vista" farms throughout Latin America....but hey, why not use the name if it's true?!).
