For a wet process coffee, the flavors carry surprisingly fruited profiles that are complex, and a bit juicy. When we found out that it underwent a special extended-fermentation time, it all made sense. The 40+ hour tank fermentation seems to have imbued this coffee with a mix of fruit flavors that are uniquely aromatic. Our medium roast had an underlying red fruit punch scent when grinding the coffee, sweet and juicy. The wet aroma showed a perfumed essence, like red jelly candy, and pleasantly intense. The cup is also very aromatic, a red fruit blend with suggestions of apple and raspberry, and even tea-like. There are slight mulling spice hints, like what you might find in apple cider spiked with cinnamon sticks. As it cools the flavors take on a pomegranate quality that bring out a tart aspect that structures the complex flavors a bit. I found this coffee to be at peak flavor with 48-72 hours rest after roasting to a medium (City) roast level.

This lot is a blend from 30 small producers in La Argentina town, within Colombia's southern Huila department. What's interesting about this coffee is that it underwent a special extended-fermentation process that's brought uniquely aromatic fruited essence to the cup. It starts like any other wet process ("washed") method, by pulping the seeds of their fruit using typical pulper machinery. Next, the beans undergo controlled fermentation in tanks for a period of 40 to 50 hours, after which it is washed with clean water to remove any remaining fruit mucilage, then dried in solar dryers for up to two weeks. The cup is fruited with red fruits and berries that come off a bit juicy. It's quite an interesting profile, and really stands out when tasted next to a more basic wet procerss lot. The coffee is grown between 1600 and 1900 meters, and most of the farms are planted in a mix of Caturra, Variedad Colombia, Castillo.
