There's a broad range of flavors to be unlocked in Ichamama that transform and shape shift with roast. We're loving it at both City and Full City roast levels, and the biggest trade offs are lighter, brighter flavors for more juicy, dark flavors that come with deeper development. There are elements of fig bar and raisin in the dry ground coffee, with spiced sugars, and molasses notes in both light and darker roasts. The wet aroma has more potent fruit and brown sugar smells, alluding to jellied cranberry, fruit pastry filling, and more. Lighter roasts extract citrus and berry accents, orange, dried cranberry, golden raisin, and a hint of lime zest. The acidity has a mouth-cleansing quality at City roast level, highlighted by orange notes that are both juicy, and a bit grabby on the palate like citrus peel, or long-steeped black tea. The coffee shows its aromatic side as it cools, with hints of lemon black tea and clove in the finish. The fruit flavor notes at Full City have juicy characteristics, like pomegranate, grape, even a hint of tropical punch. Cocoa bittering makes its way into the profile after the coffee's cooled down some, and offers a contrasting bittersweet dimension to the fruits.

Origin & Farm Notes

This coffee is from the Ichamama Factory, a washing station near Karima Hill in Nyeri. The station was named after the Ichamama river which flows near enough to the station to be the source of water for processing coffee. Ichamama is one of 19 washing stations that make up the Othaya Farmer's Coopertive Society, a coop-run organization, one of the older ones I might add. Othaya started in the mid-1950s, ballooning from 250 original members to 15,000 strong today. Karima is one of the older of the group, erected in 1964, and currently with nearly 1,000 farmer members (and is one of the most productive of the 19). The station sits at about 1750 meters above sea level, and coffee is grown in the higher altitude areas surrounding it. This is the Peaberry outturn, a separation of all of the small round beans from the flat beans (traded as grades AA, AB, C, and others). I should note that we found some flat beans mixed in with this lot of peaberries. It's not all that uncommon, especially considering the separation is done using perforated screens/sieves. If some of the flat beans for a particular lot happen to be the same screen size as the peaberries, it becomes difficult to keep them from passing through with the PB's.
