Full Cupping Notes
The dry fragrance shows a sweet scent of caramel, turbinado cane sugar, accented by praline almond, and hint of peach. The wet aroma is more intense, bittersweet but balanced, a bit of cinnamon spice, hazelnut, and a hint of fruit in the steam. While it's the coffee's balanced core bittersweetness that impressed us at first, the cooling coffee revealed other top notes that added interest to the cup. It's such a pleasant coffee to drink, not super fruited or extreme. A caramel sweetness butts up against a dark chocolates, along with hints of cinnamon stick, almond, and a sweetened condensed milk note brings out the creaminess felt in Bojonalito's body. The cup has very nice chocolate roast tonality in the mid-to-dark roasts. Unless you take it far into 2nd snaps, you can expect a coffee that's balanced, bodied, and very sweet. Bojonalito is a great option for both bodied, chocolatey brew, and inky espresso shots that shine on their own, or beneath a pillow of steamed milk.

Origin & Farm Notes
This lot comes from the community of Bojonalito in the municipality of La Libertad, Huehuetenango. Altitude in this area spans a range of roughly 1500 meters in town, on up to about 1800 meters in the surrounding hillsides. Like most of the coffee communities in the area, farmers of Bojonalito plant Bourbon and Caturra types for the most part, with the occasional Typica mixed in. Coffee processing is handled at the farmer's home or the home of a neighbor, and then the coffee is patio dried. The dry parchment is transported down to Huehue town where it is dry milled and prepared for final export out of the country. We spent many hours at the cupping table sorting through small producer lots from the region in order to put these 21 bags together. This is part of our "Proyecto Xinabajul", a project started with the intent of reaching small coffee producers in the distant mountain towns of Huehuetenango.
