Full Cupping Notes

The coffee grounds have notable sweet smells, City roasts offering hints of dried apple and brown sugar, with bittersweet dark cocoa taking the lead at Full City. The wet aroma smells more fruit-forward than the grounds, with cooked fruits, pear butter, brown sugar, and a hint of cinnamon. The brewed coffee has syrupy sweetness, at first like simple syrup made with brown sugar, then shifting to pear/apple juice. It's sweet and delicious at City/City+ roast level, and shows plump fruit accents in the top end, drawing out a very nice acidic impression, and rounded out by a host of unrefined sugar notes that really persevere in the long finish. The mouthfeel is pleasantly grabby as the coffee cools, with accents of blackberry tea, and apple dried with the tangy/bittering skin intact. The level of sweetness is excellent at Full City roast level too, with flavor profiles of chocolate confections, truffles, dark chocolate ganache, and a hint of berry as it cools.

Origin & Farm Notes

Like many of his neighbors, Axel Palacios grew up in a coffee family. His great grandfather started planted coffee in Palmira, La Libertad, and packed everything in and out of the mountainous region by mule. Through the years, the land has been divided into separate plots, passed down from one generation to the next. Axel took on his part of the farm in the late 90's, planting in Bourbon, Catuaí and Caturra cultivars. The altitude of his land ranges from 1500 to 1900 meters above sea level. His coffee comes to us through a joint-effort of two local micro-mill owners who are perform farmer outreach on our behalf finding and delivering many, many samples to us of coffees from family members and neighbors alike all over the Huehuetenango region. Each year we make several visits to the area in order to visit as many of these farmers as possible and cup hundreds of samples with the hopes of expanding our "Proyecto Xinabajul" project that we started more than 15 years ago.
