The fragrance of the ground coffee lets off accents of tea, dried fruits and berries, a sweet scent of panela sugar. The wet aroma smells sweetened with warm honey, wisps of spice and tea, and a note of golden raisin. Sipping this coffee, the top notes were a bit restrained at first, but sweetness was not! Even hot, the coffee is infused with notes of honey, molasses, and raw sugar that are heightened by syrupy mouthfeel. Hints of fruit start to emerge as the coffee cools, subtle notes of D'Anjou pear, cherimoya, and red berry. The cup has juicy acidity too, tartaric, like grape, which is heightened at lighter roast levels. Tea notes impact the aroma and lead to delicate hints of jasmine pearls, chamomile, fading to strong black tea bittering, and woody whole cardamom in the aftertaste.

Origin & Farm Notes

This Chiroso coffee is from farmer Carlos Emilio, in the town of El Virgel, Santa Barbara region of Colombia's Antioquia department. Carlos had been growing coffee for nearly 40 years when he was introduced to the Chiroso variety, a coffee type once thought to be a regression of Bourbon, but recently linked to being of Ethiopian descent. Perhaps more importantly, Chiroso has been a big win for farmers who can get their hands on it as it's known for high productivity and very positive cup flavors. Carlos's farm is called, Los Alpes, and has been under his care for 39 years. The altitude at the farm is 1850 meters above sea level, and he's planted most of that in Caturra, Chiroso, and Gesha. We were lucky secure three Chiroso lots on this latest container, and all three express the aromatic top notes and fruited accents that make this cultivar so special and prized. Limited quantity, so grab a bag before it's gone!
