This coffee from Miriam Gomez brews crowd pleasing sweetness all the way through Full City, wrapped in bittersweet flavors and thick body, with an acidic hint of malic fruits. The grinds smelled very well balanced in our City+ roast, dark sugar and bittersweet cocoa, with a subtle suggestion of dried peach. The wet aroma has great intensity, dark cocoa with a caramel swirl, and a toffee nut accent note. The brewed coffee is accessible, well balanced, with sweetness of caramel and raw sugars wrapped into bittersweet notes like semi-sweet chocolate chips. There's a moderate level of acidity in light roasts that came off like red apple, with a mouth cleansing brisk finish. My Full City+ roast had a thickness to it, heavy bodied, and displayed inky flavors of dark cocoa powder, chocolate stout, and a smokey/campfire aspect that all come together like smoked dark chocolate.

Origin & Farm Notes
This microlot was produced by Miriam Gomez from Bojonalito town, La Libertad area of Huehuetenango. Bojonalito is up in the rural region of Huehuetenango, not far from the border with Mexico. aMiriam's farm is planted at roughly 1700 meters above sea level and planted in a mix of red and yellow Caturra. She and her late husband inherited the 5 hectares of land from her grandmother, clearing the rough landscape for coffee. After her husband passed away, she and her four children have continued cultivating coffee, making improvements to the farm and thier milling equipment over time. The wet mill looks to be quite efficient, and is set up to do some initial grade separation by density before sending to separate fermentation tanks. We've bought her coffee for many years now, but never large enough lot sizes to keep separate. This is our first year having a microlot from Miriam's farm, and we feel very fortunate to have her as a part of our Proyecto Xinabajul.
