Full Cupping Notes
The grinds had a scent of cocoa butter, a nice balance of bittersweet notes, caramel, almond, and chocolate malted grains. Adding hot water drew out a whiff of fresh baked chocolate brownies with nice roast intensity behind it, along with a hint of raisin. This is a very pleasant coffee to drink, restrained top notes work their way up from behind more prominent profiles of unrefined sugars and roast toned notes, the latter quite substantial at Full City/FC+. The sweetness in light roasts was hinted by spice, caramel almond, snickerdoodle cookies with cinnamon. There's a subtle green apple note that gives the cup a moderate vibrant feel that's mouth pleasing. Darker roasts are syrupy, thick-bodied, with notes of semi sweet chocolate chips, dried coconut, and walnut. The finish is accented by darker baking cocoa notes, and some bitter orange.

Origin & Farm Notes
"Don Pilo" is the name of a coffee plot on the 25 hectare Finca Terrazas in La Libertad, Huehuetenango. The farm is owned by the Vides family, who have been producing coffee in this region for three generations. The Vides family also manage a farm, La Bolsa, which we've bought in previous years. This part of the farm sits at 1825 meters above sea level, and is planted in Caturra, and Pache. After the coffee is harvested, they allow the cherries to ferment for 36 hours before pulping the fruit. It's then fermented for 16 hours, and moved to dry on the cement patio for around 2 weeks. Don Pilo is such a nice drinking coffee at aa wide range of roasts, and a milder level of acidity when roasted dark makes it an appealing option for espresso too.
