Finca San Miguel Bourbon stood out as being versatile in roast and brew method and the balanced flavors ought to please the crowd. Grinding a City+ roast released a scent of caramel, with accents of molasses bread, and chocolate crinkle cookie. Pouring the hot water on the grinds developed bolstered sweetness a bit, and the crust that formed at the top of my glass let off notes of caramel crumble, semi-sweet chocolate chips, and hint of toasted sesame. The cup sweetness was caramel-toned and creamy, very nice in the City+/Full City range, accented by a hint of vanilla bean, and chocolate biscotti. Chocolate flavors have ample sweetness behind them, and come off a bit like Hershey's chocolate bar. The coffee cooled to a lactic hint of sweetened condensed milk, with hazelnut chocolate in the aftertaste. The acidic impression had a pleasant tea-like impression in our lighter roasts, and very low intensity. Full City roasts showed more intense cocoa bittersweetness, with a sweet-nutty accent of chocolate-covered almonds, and a long finish.

Origin & Farm Notes

This small lot of Bourbon variety comes to us from San Miguel farm, in El Salvador's Santa Ana region. The farm sits right on the border with Ahuachapán and Son Sonate, an area referred to as "Tres Limites", in the Apaneca Illamatepec mountain range. If you're familiar with the coffees we buy from Finca Miravalles, you'll likely recognize the family behind the farm, the Duarte's. San Miguel is Luis Duarte's original family farm, that through the years was all but abandoned. Last year he and his son, Luis Jr, began the process of bringing the long process of renovation, stumping many of the old trees, and replanting large areas of the farm in Bourbon (red and orange), Maracaturra, Gesha, and small amounts of Rume Sudan and Kenia. Altitude and San Miguel spans a range of 1480 to 1620 meters above sea level. Thislot was harvested from the old Bourbon trees on the farm, just before the stumping started. The coffee cups very similar to the Bourbon we buy from neighboring Miravalles, and in a way, is symbolic of the revitalization and renewal that is well underway.

A great coffee, but so far I’m having a bit of trouble dialing in the roast, as this one seems to roast differently than many similar coffees. I’m finding that there is a long stall after first crack, and as far as I can tell, no second crack whatsoever. Going also by smell seems to suggest this long period of little development after first crack where the smell changes very little for a long, long time. The coffee has been delicious, I’ve roasted about 2-3lb of my 10lb batch, and the Sweet Maria’s tasting notes seem pretty spot-on. I’ve just ended up with different roast levels with an inability to dial it in, which is strange for me. I’ve roasted hundreds of pounds over the years of lots of types of coffees, many of them wet-processed bourbon varieties from Central America. Just thought I’d share my experience.

By Far some of the best espresso I've had. Medium Dark stopped just before the second crack. 6 Days of degassing.
