Ethiopia Organic Dry Process Birbirsa

We are pleased to once again offer this impressive dry process lot from Birbirsa coop in Western Jimma. The dry fragrance was lightly fruited across our roast range, hints of stone fruit with honey and brown sugar. The wet aroma showed more bountiful fruit notes, but still had a lighter, wet process intensity than some of our other dry process coffees. Hints of dried peach, lime, citrus tea, came through, along with a honey sweetness that hangs in the air. These roasts brewed bright fruited flavors for dry process coffee, with stone fruit and citrus highlights, similar to some of the other Western Ethiopian coffees we buy. Sipping a City roast, flavor profiles included juicy flavors of pear and peach, dried apricot, and an orange marmalade note. It has a very nice acidic dimension for dry process coffee, tea-like, that along with spice hints in the cup aroma, brings out notes of Earl Grey tea with lemon. Honey sweetness is syrupy, fading to some really nice roast flavors of cocoa bittering in the aftertaste. At Full City, the vibrance was dulled a bit, but you're left with bittersweet chocolate that suits the syrupy texture, along with hints of rustic dried fruits.
