Light roasts of Guji Tuku brew quite a unique dry process cup, bright and clean, with an interplay of complex fruits and delicate aromatics. The ground coffee has such an impressive array of fruit smells, sweet and juicy, mango, cooked peach, red berries, and a sweet honey note. The wet aroma smelled just as incredible. My light City roast (1:30 post 1st Crack) let off a scent of ripe strawberry in the steam, accented by Chai spices, and faint floral suggestions. The flavor profiles at City roast level are as intensely fruited as they are delicate and aromatic. It has the floral and fragrant flavors that you expect from washed Ethiopian coffee, like hints of jasmine, and rose water. As you move through the cup, layers of fruit unfold to notes of ripe blueberry, strawberry Starburst, Naval orange, and a fragrant Honeydew melon note. The acidity sparkles at this roast level, with juicy berry, and a bit of citrus peel-like bittering giving the profile a well structured feel. Just a shade darker at City+ brought out a complex note of pomegranate molasses, with aromatic hints of rue, and coriander in the top end. Bittersweetness is drawn out a bit, but still more of a background feature. I did not roast this coffee darker, but wouldn't hesitate to go as dark as Full City if you're looking for more of a mix of dark chocolate and fruit flavors.

Origin & Farm Notes

The lot was processed at a privately owned coffee mill called Gerba Dogo, not far from Gerba town, Guji Zone. "Tuku" is the mill owner's name (green jacket, third photo), who is working with a local exporter as a vertically integrated wet mill. In this case, the exporter provides Tuku financing to buy cherries during the harvest season, and a link to the market. The processing site sits at 2125 meters above sea level, and some of the farms they buy from are even higher elevation. The dry process method is the oldest way of processing whole coffee cherries down to the green seeds we roast, and is a big part of why coffees like Tuku taste so fruity. It takes a lot longer to dry whole coffee cherries down to the standard of 10-11% moisture, and during that time a fermentation occurs within. Not only are dry process coffees often fruit-forward, they also produce a lot more chaff than fully washed ("wet process"). Just be aware of it and be sure to vacuum your roaster between batches, especially for those with open heating elements, like a Behmor. Speaking of which, we're seeing some pretty small beans in this lot, thankfully not so small that you need to worry about roasting in your Behmor. We tested 200 grams of coffee, and only had a couple beans slip through the grid.
