Full Cupping Notes

The smells in the ground coffee have a pleasantly mild scent of brown sugar, barley malt, with a hint of cooked fruit. Adding hot water pulls out more potent sugar browning sweetness, and the break produces hints of molasses and cinnamon. We've been really impressed by the sweet cup profile, especially considering it's decaf. At City+, caramel notes are a bit part of the core flavor profile, branching out to malty accents in the aroma, and a moderate acidic impression. The cup cools to notes of brown sugar, caramel cookie, banana bread with walnuts, as well as faint indications of 'decaf', like whole grain notes. Full City roasting amplifies the chocolate bittersweets, with a hint of natural carob in aroma, and a note of marbled chocolate bread in the finish. This lot has pretty impressive body too, making it a nice option for bittersweet espresso at Full City and beyond.

Origin & Farm Notes

This decaf is from the Samaria farm in Belén de Umbria, Risaralda Department. The farm dates back to the 1930's, when Gerardo Escobar Mesa and Enriqueta Ceballos moved to Belén de Umbria in search of new opportunities which were found in cultivating coffee. The farm has been family-run for four generations now, and has expanded to offer a range of different coffee varieties and processes. This lot is comprised of their Caturra cultivar, grown at approximately 1600 meters. The coffee was initially wet processed by Samaria, which for them involves a 12 hour fermentation to break down the sticky fruit mucilage, then drying on the patio. The coffee was decaffeinated by Descafecol, in Tolima, who use sugar cane as one of their main sources for the naturally occurring chemical needed for the process (hence the nickname "sugar cane decaf", which is likely only one of the sources of EA).
