Beneficio Los Angeles is located in the famed Dota region of Tarrazú, and is owned and operated by Lizeth Castillo, and husband Ricardo Calderon. They manage a few different plots of land around the mill where they've planted a mix of cultivars such as Catuaí, Gesha, and the SL-28 bourbon variety from Kenya. Quality is at the front of the Castillo-Calderon family who put a lot of care and intention in their farm and post-harvest practices, which has earned them top placement in past Cup of Excellence competitions. The coffee is grown between 1800 and 2000 meters above sea level. This lot is a separation of Catuaí cultivar, processed using the traditional wet process/"White Honey" method. This differs from typical wet processing because there is no fermentation involved to remove the sticky mucilage layer. Instead, they use a mechanical demucilager to remove most of the fruit, and then a clean-water soak before drying on raised drying tables. While you should expect some chaff during roasting, there's quite a bit less than honey process, and more uniform coloring too.
